Sausage

 

Made with selected pork meat and filled in lamb or mutton casings. The unique seasoning with spices and salt give it its distinctive taste and flavour.

It’s either an excellent ingredient to barbecue and to stew with peas and tomato sauce.

Life : 10 days

 

Cotechino

 Produced with a mixture of pork meats, added spices and wine, which are introduced into a gut casing. It’s a typical winter dish which, together with stewed lentils and tomato sauce as a side dish, is very common in Brescia, Mantua and Milan provinces. It’s a salami to boil.
